Spinach paper. The BFD.

Spinach paper can be eaten as a tasty crunchy vegetarian snack or as one of those decorative add-ons chefs are embellishing their food with these days.

Super simple and easy to make: this only takes a couple of ingredients, a silicone baking mat and hours of spare oven time.

Ingredients:

  • A 300 g potato, peeled and cubed
  • 300 ml water
  • 400 g spinach leaves
  • Pinch of coarse sea salt
  • Pinch of coarsely ground pepper
  • Pinch of grated nutmeg
  • Ice
  • Paper towels
  • Silicone baking mat

Method:

Put potato and water in a smallish pot on the stove. Bring to a rolling boil and cook the potato until very soft. Bring a second pot of water to the boil and fill a bowl with ice and cold water. Blanch the spinach quickly in the boiling water, then place into the ice water to quickly cool. Pat dry with paper towels.

Put everything into a food processor and mix until a smooth green paste is attained.

Using a metal spatula, spread the mix evenly and thinly on the silicone mat, place in the oven and bake for three to four hours at 90 to 100 Celsius, turning over to bake the damp underside towards the end of baking. If the spinach paper hasn’t fully dried by the end of three or four hours, then remove it from the oven and let it air dry to finish the process.

Break off bits to either eat as a crunchy tasty spinach bite or use as decoration to a dish when serving.
